Enchanted enchiladas
Wow wow wow!! This is a recipe that I have been doing for years...... well I was making the fattening version.... not anymore! This whole plate is only 4 points! It’s amazing and you won’t be missing out on flavor that’s for sure! Check it out!
Here’s what you’ll need:
2 lbs Lean Ground Chicken
Ole Low Carb Tortillas
1 can Old El Paso Red Enchilada Sauce
1 can Fat Free Refried Beans
1 bag Fat Free Shredded Cheese
1 bag reduced fat Mexican cheese
2 bags Birdseye Cauliflower Rice
1 package Vigo yellow rice seasoning only
Recipe:
Thoroughly cook the your ground chicken on the stove top in a pot, once cooked through, add half a can of enchilada sauce, add a couple handfuls of fat free shredded cheese. Let it get melty, fill your tortillas and line them up in your sprayed pan, make sure you spray your pan with non-stick spray. Top your enchiladas was the remaining enchilada sauce and top with some of the reduced fat Mexican cheese (you can use fat free to save a couple points but the reduced fat seems to melt better). Bake in the oven on 350 for 30 minutes.
For your cauliflower rice use a fry pan sprayed with Pam and brown the cauliflower rice, once browned, add your vigo seasoning mixture with a little olive oil to make a paste. Mix all together and keep warm. Heat your refried beans and serve!
