Jumpin' Jambalaya

This one is a keeper! This low point wonder is delicious and does not taste healthy! It is loaded with protein and will keep you coming back for more!

Here's what you will need:

2 boneless skinless chicken breast

1 package turkey kielbasa sausage

1 lb frozen shrimp peeled and deveined

1-2 packages of Birdseye cauliflower rice

1 Can of Black Beans - Drained and Rinsed

1 Can of Red Beans - Drained and Rinsed

1 Can of tomato paste

1 sweet onion

1 bell pepper

How you make it:

Cook your chicken and shrimp throughly in separate pans, combine together in a pan with your sausage, onions, and bell pepper, keep warm on the stove. In a separate pan cook your cauliflower rice till it gets nice and browned, add 1/2 a can of tomato paste and add more to taste if needed, also add your black beans, and red beans to this mixture.

Once done, put one scoop of "rice mix" on the bottom and top with your meat mixture and add a little mozzarella cheese on top! Yum!!

Total Weight Watchers Freestyle Points = 3 points per serving
