Southwestern Egg Rolls

These Southwestern Egg Rolls will knock your socks off, they are loaded with filling WW 0 point filling and are only 1 point per Egg Roll! We made our Egg Rolls with our Air Fryer, if you don't have one, you have to get one. Completely life changing!
Here's what you will need:
Large Egg Roll Wrappers
1 Piece of boneless skinless chicken breast
1 Can of Corn
1 Can of Black Beans
1 Can of Rotel tomatoes and chilies
Fat Free Cheddar and Mozzarella Cheese
Optional: Salsa Ranch Dipping Sauce 2 Tbsp =2 Points additional if used added to points below
Air Fryer!!
Recipe: Cut the boneless skinless chicken breast into very small pieces and cook on the stovetop until done, add your very well drained corn, black beans and rotel to the mix. Saute until all of the ingredients are combined. Remove from the burner and set up your wrapping space. Lay out an egg roll wrapper and first put your cheese down, this creates a barrier between the wrapper and the mixture and prevents tearing. Once the cheese is down add the mixture on top and wrap everything in the egg roll wrapper sealing the edges with water. Spray your air fryer with olive oil pam and lay your egg rolls in the bottom of the air fryer. We cook ours on 360 Degrees for 5-6 minutes on each side, when you flip them be sure to spray the other side with the olive oil spray again to help them get crispy.
We love to use the salsa ranch dipping sauce, it adds so much to the dish!
