Southwestern Quesadilla
This one is an awesome quick lunch to be able to throw together.
Here's what you will need:
Low carb Tortilla
Fat Free Cheddar Cheese
Fat Free Mozzarella Cheese
Black Beans
Corn
Cooked Boneless Skinless Chicken Breast
Sautéed Onions & Bell Pepper
Optional: Fat Free Greek Yogurt for dipping = 0 points
Recipe:
cut and cook the boneless skinless chicken breast and combine with your onions and pepper to join the flavors. Once almost done add the black beans and corn. In a separate fry pan, spray with pam and lay out your tortilla shell, sprinkle on the cheese and add your mixture on top of the shredded cheese. Cook till crispy.
