Guiltless Meatball Sub

This all started when my dad was craving a meatball sub and the traditional meatball sub is like 16 points!!!! omg... that's like almost our daily points count so we tweaked it and did some fun food swaps to make this a doable recipe and not feel the guilt. The entire sandwich is 6 points!!

Here's what you will need:

1 lb Lean Ground Turkey (you will have left over meat balls- freeze them for easy meal prep later)

1 lb Lean Ground Beef (you will have left over meat balls- freeze them for easy meal prep later)

1 Jar of Prego or whatever spaghetti sauce you prefer

1 bag of fat free mozzarella cheese

1 Sub Roll we stick to a 4 point sub roll from Aldi so your point count is accurate to the points above

Here's how you make it!

Preheat your oven to 350 degrees, combine your lean ground turkey and lean ground beef and mix together by hand. I don't add anything else to the mix because that adds points and the flavor is so good you don't need it. Once you have mixed the meats roll the meat mixture into golfball size meatballs and put on a sprayed cookie sheet, this mixture makes more than enough for your sandwich plus left overs for freezing. Bake your meatballs for about 30 minutes and cut them to make sure they are thoroughly cooked through.

Build your sandwich by cutting about 3 meat balls in half and laying them on your sub roll, top with a small to medium portion of sauce and top with your fat free mozzarella cheese. I always pop it back in the oven to get it melty or broil it for a minute to get your roll kind of crispy on top.

When eating this sandwich it truly felt like we were cheating big time on our weight watchers plan but it was soooo good and low on points. This one is definitely a keeper at only 6 points a sandwich!
