Amazing Egg Rolls!!!

Wow!!! These Egg Rolls are life changing! This recipe makes about 8-9 egg rolls and serves 2-3 people. We usually have these as our dinner and have 4 egg rolls each for a total of 8 points for 4 eggrolls!

Here's what you will need:

1 Bag of shredded Cole Slaw Mix

1 Bag of Broccoli Slaw Mix

A small portion of either Chicken or small salad shrimp whichever you prefer both are 0 points

1 Tbsp Sesame Oil

1/8 Cup Reduced Sodium Soy Sauce ( To Taste)

Large Egg Roll Wrappers

Sweet and Sour Dipping Sauce (The point count includes this sauce- subtract a point if not used)

Cooking Directions:

If you choose to use Chicken pre-cook your chicken and cut it into tiny pieces. In a separate pan grab 2 handfuls of cole slaw mix and 2 handfuls of broccoli slaw mix and add it to your pan with 1 tablespoon of sesame oil and start with half of the 1/8 cup of soy sauce and add more to taste if needed. Once you have cooked it down a bit add your chicken or shrimp to the mixture and let it get hot.

Lay your egg roll wrapper on a clean plate and put some of your filling in the middle where you can still fold it in a diagonal pattern (pictured below), fold in the corners first then using water wet the corners and complete your egg roll wrap by rolling across and sealing your edges. Once you have completed your rolling go ahead and spray the egg roll on one side with olive oil cooking spray and insert the egg rolls in to your air fryer or oven and cook them at 360 degrees for 5-8 minutes on each side or until golden brown spray again with olive oil cooking spray when flipped. Keep an eye on them as they can get over done quickly. We have only tried cooking these in an air fryer and they turn out so yummy and crispy but I'm sure you can do them in an oven and they turn out good just not as crispy.
