Deconstructed Egg Roll

Yum Yum Yum..... that's all we heard at the dinner table when we served this on Easter Sunday. We had family over that isn't on Weight Watchers and they couldn't get enough. It was delicious and really filling. You don't have to add the potatoes on the side but it definitely gave it something else having a little bit of carbs on the side. This whole plate was 4 points. Definitely a keeper!

Here's what you'll need:

- 1 Lb Ground Turkey

- 1 Large Onion Diced

- Head of Cabbage

- A Handful of Baby Carrots

- A Handful of Carrot Matchsticks

- 2 Tablespoons of Sesame Oil

- 1 Tablespoon Vegetable Oil

- 1/4 Cup of low sodium Soy Sauce

Cook and crumble ground meet and onions in a very large skillet, cook until cooked through. While meat and onions are cooking cut cabbage into thin shreds, set aside, cut carrots and set aside. Combine your oils and soy sauce and set aside. Add cabbage and carrots to ground meet then cook and stir over medium high heat for 3-4 minutes add your soy sauce mixture then stir well. Reduce heat to medium and continue cooking for 5-10 minutes or until cabbage is tender.

We added 2 golden potatoes each for this recipe so it increased our point count, for just the stir fry it would have been 2 points for a large plate. We added 1 point for the potatoes.

Weight Watchers Freestyle Points Value = 2 for Stir Fry and 1 for Potatoes on the side = 3 Total for the whole meal.
