Beyond Delicious Barbecue

This was my parents birthday dinner, we wanted to include our usual yummy vegetable mixture as well as the Barbecue Chicken, Shrimp Skewers and some delicious golden potatoes.

The whole meal was 3 points. Yes.... the WHOLE PLATE was 3 points.

Here's what you'll need:

- Summer Squash

- Zucchini

- 1 Sweet Onion

- 1 Small Bag of Snap Peas

- A handful of Baby Carrots

- 1 Sweet Bell Pepper

- Boneless Skinless Chicken Breast

- G Hughes Sugar Free Barbecue Sauce (we use the hickory one)

- 1.5 lbs of Shrimp

- Skewers

- Golden Baby Potatoes

Preheat your oven to 375 degrees for the potatoes, bake the potatoes in a pyrex pan for about 50 minutes or until soft in the middle. Next you will cut all produce except for the potatoes and add to a skillet. Grill your chicken and shrimp skewers adding barbecue sauce to the chicken. Cook your vegetables on the stove top until desired softness.

That's it! Easy and delicious!
