Chicken Fried "Rice"

This one's another keeper, you will truly feel like you're indulging in some seriously bad for you Chinese food. This recipe features one of our favorite new tricks the cauliflower rice substitute.

Here's what you will need:

Package of Birdseye Cauliflower Rice

2 Eggs

1 Bell pepper chopped

1 Onion chopped

2 Boneless skinless chicken breasts

1 Package Sunbird Fried Rice seasoning mix (international foods isle at Publix)

First, Cook your chopped chicken until done, then in a separate pan add a small amount of olive oil and brown your cauliflower rice, bell pepper, and onion. Once brown add your package of Sunbird Fried Rice Seasoning mix (follow instructions on package) and mix well. Push mixture to the side and scramble the 2 eggs then combine with "rice mixture". Finish off with adding the cooked chicken and ENJOY!
